Origin: Chianti area
Soil: Vineyards facing South East, composed of a light soil allowing a perfect over-ripeness
Vines: Trebbiano Toscano and Chianti's Malvasia Bianca
Harvest: Normally during the 2nd and the 3rd decade of November. The best bunches are dried on straw mats
Vinification: Extremely slow, in small barrels of 100/200 litres
Ageing: In the same barrels, for 4 years at least
Bottling: The blend resulting from the different barrels, is bottled after a minimum of 4 years
Refining: 6 months in bottle
Colour: Golden yellow
Bouquet: Intense, very complex, resulting from the aroma of the vines, the long storage in the barrels and the cellar's yeasts
Taste: Full, rich, reminiscent of dried fruits
Food paring: Dessert wine, ideal with light cakes or biscuits
Notes: Only produced in the best vintages
